Rihaku ‘Dreamy Clouds’ Tokubetsu Junmai Nigori |30|
Dreamy Clouds is quite special because its milling rate (Seimaibuai) of 59% technically qualifies it as Junmai Ginjo grade – a rare quality level for a nigori sake! It presents an opportunity for nigori drinkers to taste new styles of sake. This nigori is bright and lean in the mouth, unlike many nigoris, and the impact is chewy with sweet rice flavors intermingling with the nutty and slightly fruity characteristics. 300ml – 15% ABV – Choguku, Japan

All components are fermented separately, partially carbonic for brightness and all whole cluster adding to the complex spice aromas. 44% Trousseau Noir, 22% Gamay, 18% Valdiguié, 13% Cabernet Pfeffer, 3% Poulsard.

Fruity aromas of red cherry and fresh berries lead to a medium-bodied palate full of fruit with silky tannins. Elegant and energetic, the perfect every day Pinot Noir! Majority large used Austrian oak casks from Stockinger with some older French casks.
